Veal Chops Pizzaiola is a deliciously simple recipe to make if your in a hurry. This flavorful recipe can be made using veal, steak, chicken, fish or pork. I’ve always preferred the tenderness and flavor of the veal.
Oregano is a main staple in many Mediterranean dishes. This herb is mostly associated with pizza but is widely used on grilled meats and fried vegetables. This aromatic herb is always more flavorful dry than fresh.
In this Veal Chops Pizzaiola recipe the garlic, oregano and tomatoes enhances the already delicious flavor of the veal. Serve it with potatoes or rice or a nice salad on the side.
INGREDIENTS
6 veal chops 1/2 inch thick
1 bunch of long green onions sliced
1 green pepper, sliced
8 white button mushrooms, sliced
3 cloves of garlic, chopped
2 Tbls of extra virgin olive oil
1 Tbls of butter
2 15oz. cans of diced plum tomatoes
1 Tbls of dried oregano
1/2 tsp of salt
1/2 tsp of fresh ground black pepper
1/4 cup of fresh parsley, chopped
PREPARATION
Season the chops with salt and pepper
In a large saucepan sauté the chops in the oil and butter until browned. About 3 minutes on each side.
Remove the chops from the pan and keep warm
Sauté the garlic, onions and peppers until tender about 2 minutes.
Place the chops back in the pan
Add the mushrooms
Add the tomatoes and sprinkle with oregano
Cover and cook for about 1hour until tender
Garnish with parsley
Serve with rice or potatoes. Serves 6 people.
