Easy Turkey Soup

This Easy Turkey Soup Recipe is perfect for after the holiday. After all that cooking for Thanksgiving it’s nice to throw a few things together to make a healthy satisfying meal.
Besides soup, turkey leftovers make great sandwiches and stews. This is a low cal recipe made with low fat chicken broth and fresh vegetables. It’s very satisfying and nutrition.
As it gets colder out, soups make the best meals. This Easy Turkey Soup will surely warm up the whole family. INGREDIENTS
2 Tbls of light extra virgin olive oil
2 cloves of garlic, chopped
1 yellow onion, chopped
2 carrots, sliced
2 stalks of celery, sliced
3 white potatoes, cubed
1 pound baby spinach, rinsed and stems removed
4 15oz cans of low fat chicken broth
1 cup of water
2 to 3 cups of leftover turkey, diced
1 tsp of thyme
2 bay leaves
1 tsp of salt
1 tsp of fresh ground black pepper
PREPARATION
In a large pot, saute the garlic, onions, carrots, celery and potatoes for 2 to 3 minutes.
Add the spinach and cover until spinach is slightly wilted.
Add the broth, water, turkey, thyme, bay leaves, salt and pepper.
Bring to a boil then lower the heat and simmer for 30 to 40 minutes until the vegetables are tender.
Remove the bay leaves before serving.
Serve with cook whole wheat pasta (optional)
Serves 4 to 6 people
