Sweet Sour Fish Dinner

My Italian Mother created this recipe many years ago.
I was raised with a Catholic background and so every Friday, fish was on the menu. Mother would make this dish often. Now I make it for my family.
INGREDIENTS
FISH
1 lb. frozen or fresh perch fillets (may use other fish)
Flour seasoned with salt, pepper and a little paprika
2 tablespoons olive oil
1 or two onions, thinly sliced
SAUCE
1/2 cup apple cider vinegar
3/4 cup water
1/4 cup sugar
1/4 cup oil-cured black olives
Fresh basil
PREPARATION
Combine flour with salt,pepper and paprika; coat fish with flour.
Heat olive oil in a large skillet over medium-high heat. Cook fillets until golden brown.
Remove and keep warm.
In same skillet, cook onions until tender. Remove and keep warm.
To make sauce, combine the vinegar, water, and sugar in same skillet.
Cook several minutes until sugar is dissolved and sauce is slightly reduced. Return fish and onions to skillet along with the olives.
Heat until heated through.
Garnish with finely chopped fresh basil.
Serves 4.
