There is nothing more romantic than shrimp scampi. This quick and easy recipe makes an excellent candlelight dinner for two.
Due to the content of garlic, this is not recommended for a first date but perhaps for a five or ten year anniversary. You should know each other pretty good by then.
You'll enjoy these delicious little morsels smothered in garlic and butter. For a little added flavor I like using long green onions and red pepper flakes to liven up the dish a bit.
Shrimp scampi is one of the most popular shrimp recipes you can make. Served over a plate of linguine will only add to this elegant dish.
INGREDIENTS
2 pounds of medium sized shrimp peeled and deveined. Leave the tails on for added flavor.
1 pound of linguine
1 bunch of long green onions chopped
4 large cloves of garlic chopped
2 Tbls of butter
1 Tbls extra-virgin olive oil
1/4 cup of chicken broth
1/2 cup of dry white wine
1/4 cup heavy whipping cream (optional)
1/2 tsp of crushed red pepper flakes
1/4 tsp salt
1/4 tsp fresh ground black pepper
1/4 cup of parsley
2 lemons quartered
PREPARATION
Heat butter and oil in a large skillet.
Add onions and shrimp for 1 minute.
Add garlic for another minute.
Turn shrimp over and sprinkle with salt,black pepper and red pepper flakes.
Cook for one minute.
Add wine and broth and reduce for about 1 minute.
Finish with the whipping cream if desired.(It's delicious)
In a large pot boil 6 quarts of water and cook linguine for about 10 minutes.
Drain and top with scampi.
Serve sprinkled with parsley with lemon wedges on the side.
