Everything is better with Parmesan cheese. This elegant Parmesan Encrusted Rack Of Lamb is fairly simple to make and will make a marvelous presentation when served.
Lamb has always been a great springtime meal always served at Easter time. But as we all know it makes a great meal any time of the year. When I think of Lamb I think of a romantic candlelight dinner with nice soft music playing in the background.
I’m sure it’s that way in some people's homes but not in mine. When I make this dish the kids are usually screaming and arguing and there's a ton of people running in and out of my kitchen. That’s about as romantic as it gets. But in the end I know everyone will be sitting down together and sharing a great meal.
INGREDIENTS
1 8 bone rack of lamb, trimmed and frenched
1/2 cup of seasoned breadcrumbs
1/4 cup of Parmesan cheese
2 cloves of garlic finely chopped
1 Tbls of dried basil
1/4 cup of parsley chopped
1/2 tsp of salt
1/2 tsp of freshly ground black pepper
PREPARATION
Pre-heat oven to 375 degrees.
Rub the lamb with oil, salt, pepper and rosemary.
Place lamb on a roasting pan.
Roast lamb uncovered for 30 to 35 minutes for medium rare.
In a small bowl mix garlic, parsley, breadcrumbs and cheese and place the mixture on a plate.
Carefully remove the lamb and roll it into the breadcrumb mixture coating all sides.
