Pearl onions and Peas is a simple delicious side which can be served with many different meat, chicken and fish recipes. It’s best to use fresh peas for this recipe but frozen will work just fine.
These onions are available year round and are delicious sauteed in butter or braised in a chicken broth like in this recipe. They are a little tedious to peel but there sweet flavor is worth all the extra work. Pearls and peas seem to be the most popular combination of vegetables but these onions with Brussels sprouts or roasted potatoes are equally delicious.
Using just a touch of freshly grated nutmeg while cooking these onions with peas, adds an extra flavor to this side dish.
INGREDIENTS
12oz of pearl onions, peeled
12oz of fresh peas, shelled
1 cup of chicken broth
2 Tbls of butter
1/2 tsp of freshly grated nutmeg
1/2 tsp of freshly ground black pepper
1/4 tsp of salt
PREPARATION
In a large saucepan cook the onions in the chicken broth and nutmeg until tender and almost all the broth is evaporated.
Add the butter, peas, salt and pepper and cook until peas are tender.
Serve in a medium size bowl.
