My Italian Stuffed Vegetables In Home Roasted Spicy Marinara Sauce
INGREDIENTS
10 Roma tomatoes, quartered.
1 Sweet onion, chopped into 1” chunks.
4 Large cloves of garlic, peeled.
1 Serrano chili, seeded.
1/2 C Fresh basil or oregano (or 1/4 C each).
2 Tbs Balsamic vinegar.
2 Tsp Sugar.
3 Tbs Olive oil.
Salt & pepper to taste.
PREPARATION
Preheat oven to 450 degrees.
In a large bowl, mix all ingredients.
Arrange vegetable mixture in an even layer on a jelly roll pan.
Roast vegetables for 30 minutes, remove from oven.
Allow mixture to cool for a couple of minutes.
Place vegetables in a food processor or blender and puree mixture until smooth, taste, and add salt/pepper if needed.
