Bread Surprise Supper

When I was young and raising four boys and a hungry husband,I realized that things were a bit tough at that time in our lives and that night I had to stretch what i had.
I made my Sicilian bread dough and cut it into portions,rolled it out into individual circles. I put leftover Italian sausage,mozzarella cheese, sauce, ricotta then folded the dough let it rise and then I deep fried until it was golden brown.
I drained it and put it on a plate with hot spaghetti sauce and a salad. My boys loved it and now we serve things like this at family get togethers with lots of other Italian favorites.
INGREDIENTS
2 cups of warm water
2 Tbls of quick rising yeast
1 Tbls of sugar
4 Tbls of pure olive oil
1 Tbls of salt
4 cups of bread flour
PREPARATION
Mix all the ingredients except the flour in a heavy duty mixer.
When all is well blended, begin adding the flour 1/2 cup at a time until the dough begins to ball up.
Transfer the dough to a floured board.
Knead the dough until smooth and elastic.
Set in a greased warm bowel for 30 minutes.
Turn out the dough onto a floured board and roll out a piece of dough to about the size of a cake plate.
Place 1/2tsp of olive oil onto the center of the dough.
Place leftover, Italian sausage, Parmesan cheese, ricotta, mozzarella cheese and some spaghetti sauce in the middle.
Fold the dough over and make a half moon.
Let it rise for 5 minutes.
Deep fry until golden brown on one side.
Using chop sticks, gently turn it over and brown the other side.
When done have the rest of sauce bubbly hot and serve over the fried stuffed bread and serve with a salad.
