“Everything you see I owe to spaghetti.” ― Sophia Loren This delicious dish is very easy to put together. The creamy ricotta cheese blended with the spinach and pasta give this dish a great flavor. Enjoy! Mangia Italiano Rigatoni with Spinach and Ricotta is a quick version of stuffed shells or cannelloni. Just toss together, bake and serve and you’ll have dinner in no time. I’ve added garlic, mushrooms and onions to this recipe to give it an extra depth of flavor. Just top it off with a little mozzarella or fontina cheese and bake it until the cheese is slightly brown and bubbly.
